We make chicken taquitos all the time. They are great for a simple meal during the week, a game day or enjoyment. Everyone loves her!

Taquitos are basically rolled up tacos that are filled with meat and cheese of your choice and then traditionally fried until crispy.

To keep these taquitos on the healthier side, we bake them in the oven. Do not worry, you will not miss the frying, they will still turn out beautifully crispy in the oven.

Taquitos are usually made with corn tortillas and flautas are usually made with flour tortillas. We love using corn tortillas for these taquitos. They are gluten-free and so delicious!

You can serve taquitos as an appetizer or as a meal, it just depends on how many you eat.:) They are perfect for parties, because you can prepare them in advance and lay out all the toppings for your guests.

The list of ingredients is simple!

  • Chicken Schnitzel – We use fried chicken to keep things super simple, but you can use leftover chicken schnitzel.
  • Spices: cumin, chili powder, garlic powder and paprika
  • Fresh lime juice – just a little to lighten up!
  • Grated Cheese – You can use cheddar, Mexican mixed cheese, Monterey Jack or even pepper Jack if you want a little kick.
  • Corn Tortillas – Look for the freshest tortillas you can find.

How to make taquitos

Preheat the oven to 425 degrees F. You want the oven to be nice and HOT so that the taquitos become crispy. Spray a large baking tray with non-stick coated cooking spray and set it aside.

In a medium-sized bowl, combine the shredded chicken with the spices and fresh lime juice. Stir until the chicken is well coated with the spices. Stir in the grated cheese.
Pro tip: to prevent the tortillas from cracking, heat them in the microwave. Make two paper towels damp and place two tortillas between each of the paper towels. Put in the microwave for 20-30 seconds. Remove from the microwave and roll up the taquitos.

Put a heaping tablespoon of the chicken and cheese mixture in the center of the tortilla and roll it up tightly. Place the taquito on the prepared baking sheet with the seam side down. Keep rolling the taquitos until the tortillas and stuffing are gone. You should have about 20 taquitos. If the tortillas tear a little, it’s okay.
Spray the taquitos generously with oil. Bake until the taquitos are golden brown and crispy.

How to save

Leftovers are stored in an airtight container in the refrigerator for up to 4 days. To warm up, put it on a baking sheet and sprinkle with cooking oil. Bake in a 350 degree F oven for about 15 minutes or until warm and crispy. You can also warm up in a deep fryer for a few minutes until you are warmed through.
You can freeze the taquitos before baking them. Put the taquitos on a baking sheet and freeze. If frozen, put taquitos in a freezer bag and freeze them for up to a month. When you’re ready to bake, preheat the oven to 425 degrees F and place frozen taquitos on a large baking sheet. Spray with non-stick coated cooking spray. Bake for 15-20 minutes.
